Description

Fluffy pancakes made with sourdough discard that add a unique flavor and reduce waste.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup sourdough discard
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter or oil
  • Cooking spray or additional butter for the pan


Instructions

  1. In a bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the sourdough discard, milk, egg, and melted butter.
  3. Combine the wet and dry ingredients, stirring just until mixed. (Lumps are okay).
  4. Heat a skillet over medium heat and grease with cooking spray or butter.
  5. Pour 1/4 cup batter for each pancake onto the skillet.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.
  7. Serve warm with your favorite toppings.

Notes

For a fluffier pancake, let the batter rest for 10 minutes before cooking. Experiment with toppings like fruits, syrup, or yogurt.
