Description
Fluffy pancakes made with sourdough discard that add a unique flavor and reduce waste.
Ingredients
- 1 cup all-purpose flour
- 1 cup sourdough discard
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter or oil
- Cooking spray or additional butter for the pan
Instructions
- In a bowl, mix the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the sourdough discard, milk, egg, and melted butter.
- Combine the wet and dry ingredients, stirring just until mixed. (Lumps are okay).
- Heat a skillet over medium heat and grease with cooking spray or butter.
- Pour 1/4 cup batter for each pancake onto the skillet.
- Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.
- Serve warm with your favorite toppings.
Notes
For a fluffier pancake, let the batter rest for 10 minutes before cooking. Experiment with toppings like fruits, syrup, or yogurt.
