Ingredients

  • 1 tablespoon olive oil (15 ml)
  • 1 pound ground beef (450 g)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin (5 g)
  • 1 teaspoon chili powder (5 g)
  • Salt, to taste
  • Black pepper, to taste
  • 4 cups beef broth (950 ml)
  • 1 can diced tomatoes (14.5 ounce s / 410 g)
  • 1 cup fideo pasta (150 g)
  • 1 can black beans, drained and rinsed (15 ounce s / 425 g)
  • 1 can kidney beans, drained and rinsed (15 ounce s / 425 g)
  • 1 cup corn kernels, fresh or froz en (175 g)
  • 2 tablespoon s tomato paste (30 g)
  • 1 lime, juiced
  • Fresh cilantro, chopped, for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the ground beef and cook until browned, about 5-7 minutes.
  3. Stir in the diced onion and cook until softened, about 3-4 minutes.
  4. Add the minced garlic and cook for 1 minute until fragrant.
  5. Mix in the ground cumin, chili powder, salt, and black pepper.
  6. Pour in the beef broth and diced tomatoes, stirring to combine.
  7. Bring the mixture to a boil.
  8. Add the fideo pasta and cook for 5-7 minutes until the pasta is tender.
  9. Stir in the black beans, kidney beans, corn kernels, and tomato paste.
  10. Simmer for 10 minutes, stirring occasionally.
  11. Add lime juice and stir well.
  12. Taste and adjust seasoning with salt and black pepper if needed.
  13. Serve hot and garnish with fresh cilantro.
