Ingredients
- 1 tablespoon olive oil (15 ml)
- 1 pound ground beef (450 g)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin (5 g)
- 1 teaspoon chili powder (5 g)
- Salt, to taste
- Black pepper, to taste
- 4 cups beef broth (950 ml)
- 1 can diced tomatoes (14.5 ounce s / 410 g)
- 1 cup fideo pasta (150 g)
- 1 can black beans, drained and rinsed (15 ounce s / 425 g)
- 1 can kidney beans, drained and rinsed (15 ounce s / 425 g)
- 1 cup corn kernels, fresh or froz en (175 g)
- 2 tablespoon s tomato paste (30 g)
- 1 lime, juiced
- Fresh cilantro, chopped, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the ground beef and cook until browned, about 5-7 minutes.
- Stir in the diced onion and cook until softened, about 3-4 minutes.
- Add the minced garlic and cook for 1 minute until fragrant.
- Mix in the ground cumin, chili powder, salt, and black pepper.
- Pour in the beef broth and diced tomatoes, stirring to combine.
- Bring the mixture to a boil.
- Add the fideo pasta and cook for 5-7 minutes until the pasta is tender.
- Stir in the black beans, kidney beans, corn kernels, and tomato paste.
- Simmer for 10 minutes, stirring occasionally.
- Add lime juice and stir well.
- Taste and adjust seasoning with salt and black pepper if needed.
- Serve hot and garnish with fresh cilantro.
