Delicious soft and moist banana muffins made with ripe bananas and chocolate chips, perfect for breakfast or a snack.
Ingredients
- 2 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- A pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- Mash the ripe bananas with a fork in a mixing bowl.
- Stir in the melted butter.
- Mix in baking soda and salt.
- Stir in sugar, beaten egg, and vanilla extract.
- Mix in the flour until just incorporated.
- Fold in the chocolate chips.
- Divide the batter evenly among the prepared muffin tin.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
For best results, use very ripe bananas for optimal sweetness. Keep an eye on the baking time as it may vary with different ovens.
