Description
Deliciously soft and chewy cookies made with cottage cheese, rolled oats, and honey, each packed with 4g of protein.
Ingredients
- 1 cup cottage cheese
- 1 cup rolled oats
- 1/2 cup honey
- 1/2 cup almond flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 cup chocolate chips
- 1/4 cup chopped nuts
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine the cottage cheese, honey, and vanilla extract in a large bowl. Mix until smooth.
- Stir in the rolled oats, almond flour, baking powder, cinnamon, chocolate chips, and chopped nuts. Mix well but don’t overmix.
- Scoop tablespoon-sized portions of the dough onto the baking sheet, spacing them apart.
- Bake for 12-15 minutes or until golden brown and slightly firm.
Notes
Use room temperature cottage cheese for easier mixing. You can smooth it out in a food processor for a better texture.
