Description

Deliciously soft and chewy cookies made with cottage cheese, rolled oats, and honey, each packed with 4g of protein.


Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup honey
  • 1/2 cup almond flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 cup chocolate chips
  • 1/4 cup chopped nuts


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the cottage cheese, honey, and vanilla extract in a large bowl. Mix until smooth.
  3. Stir in the rolled oats, almond flour, baking powder, cinnamon, chocolate chips, and chopped nuts. Mix well but don’t overmix.
  4. Scoop tablespoon-sized portions of the dough onto the baking sheet, spacing them apart.
  5. Bake for 12-15 minutes or until golden brown and slightly firm.

Notes

Use room temperature cottage cheese for easier mixing. You can smooth it out in a food processor for a better texture.
