Delicious and comforting soft-baked apple cinnamon rolls filled with spiced apples and topped with creamy frosting.
Ingredients
- 250g whole milk, lukewarm
- 50g granulated sugar
- 2 1/4 tsp active dried yeast
- 2 large eggs, at room temperature
- 1/2 tsp kosher salt
- 565g all-purpose flour
- 100g unsalted butter, at room temperature
- 850g (about four medium) apples, peeled, cored, and diced small
- 30g unsalted butter
- 80g granulated sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp kosher salt
- 1 Tbsp corn starch
- 125g pecan halves
- 190g unsalted butter, at room temperature
- 280g brown sugar
- 2 Tbsp plus 1 tsp ground cinnamon
- 1/8 tsp kosher salt
- 115g unsalted butter, at room temperature
- 225g cream cheese, at room temperature
- 250g powdered sugar, sifted
- 1-2 Tbsp heavy whipping cream
- 1/2 tsp kosher salt
Instructions
- Prepare the brioche dough: Mix the lukewarm milk, sugar, and yeast in a large bowl. Let it sit for 5-10 minutes until frothy. In another bowl, combine the flour and salt. Add the activated yeast mixture and eggs to the flour, mixing until smooth. Knead in the softened butter until the dough is elastic. Allow it to rise in a warm spot until doubled.
- Make the apple filling: In a pan, melt the 30g unsalted butter over medium heat. Add the diced apples, granulated sugar, ground cinnamon, kosher salt, and corn starch. Cook until the apples soften, about 5-7 minutes. Remove from heat and set aside to cool.
- Prepare the brown sugar cinnamon filling: In a bowl, mix the room-temperature butter, brown sugar, ground cinnamon, and salt until combined.
- Assemble the rolls: Roll out the brioche dough on a floured surface into a large rectangle. Spread the brown sugar filling evenly across the dough. Evenly distribute the apple filling, then sprinkle toasted pecan halves on top. Roll the dough tightly from the long side into a log. Slice the log into equal pieces and place them in a greased baking dish. Cover and let rise for about 30-40 minutes.
- Bake: Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes until golden brown. While baking, prepare the cream cheese frosting by mixing softened butter and cream cheese until smooth. Gradually add the powdered sugar, heavy whipping cream, and kosher salt until creamy.
- Add frosting: Once the rolls are baked, allow them to cool slightly before drizzling the cream cheese frosting over the top. Serve warm.
Notes
Allow the soft-baked rolls to cool slightly after baking to prevent the cream cheese frosting from melting excessively. Customize fillings by swapping ingredients for an added twist.
