Ingredients
- – 1.5 kg (3 lb) tomatoes, halved, cut a “V” out of the top to remove the core
- – 5 garlic cloves, NOT peeled
- – 2 tbsp (30 ml) olive oil
- – 1 1/2 tsp (8 ml) smoked paprika, optional
- – 1 tsp (5 ml) cooking salt / kosher salt
- – 1/4 tsp (1 ml) black pepper
- – 1 tbsp (15 ml) olive oil
- – 2 garlic cloves, finely minced
- – 1 onion, diced
- – 1 liter (4 cups (960 ml)) vegetable stock/broth, low sodium
- – 1/2 tsp (3 ml) white sugar, only if needed
- – 1/2 cup cream, optional, plus extra for drizzling (substitute 30g/2 tbsp butter)
- – 1/4 cup (60 ml) roughly chopped fresh basil leaves, NOT CRITICAL
Instructions
- Set your oven to 220°C/425°F (200°C if using a fan oven).
- Mix and coat – On a baking sheet, place the halved tomatoes and unpeeled garlic cloves. Drizzle with olive oil, and sprinkle with smoked paprika, salt, and pepper. Mix them to ensure they are thoroughly covered, pressing the cut side of the tomatoes into the oil on the sheet. Arrange the tomato halves with the cut side facing upwards.
- Bake for 40 to 45 minutes until the tomatoes show some charred spots.
- Cook – In a large saucepan, warm up some olive oil over medium-high heat. Cook the minced garlic and diced onion for about 3 minutes until the onion becomes clear.
- Combine – Take the garlic cloves off the baking tray. Transfer all tomatoes and their juices into the saucepan. Squeeze the garlic flesh into the mix. Pour in the vegetable broth.
- Blend until smooth using a hand blender (or use a food processor or blender if preferred).
- Simmer – Allow the mixture to come to a gentle boil, then reduce the heat to medium and let it simmer for 10 minutes. Stir in the cream.
- Serve – Pour the soup into bowls, drizzle with some extra cream, and top with fresh basil. Pair with grilled cheese and savor the flavors!
