Instructions
- Preheat the oven to 400°F (200°C).
- Place the turkey bacon on a baking sheet in a single layer.
- Brush the bacon with maple syrup.
- Bake the bacon for 15-20 minutes until crispy, then set aside.
- In a large bowl, whisk together flour, baking powder, granulated sugar, and salt.
- In a separate bowl, mix milk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Preheat a non-stick skillet or griddle over medium heat.
- Pour 1/4 cup of pancake batter onto the skillet for each pancake.
- Cook pancakes until bubbles form on the surface, then flip and cook until golden brown.
- Repeat until all batter is used, keeping pancakes warm in the oven if necessary.
- In a small bowl, combine softened butter, honey, and smoked paprika.
- Whisk until smooth and well combined to make the honey butter.
- Assemble sliders by layering a pancake, a strip of bacon, and another pancake.
