Ingredients

  • Thick-cut turkey bacon, 12 strips
  • Maple syrup, 1/4 cup (60 ml)
  • All-purpose flour, 1 1/2 cups (190 g)
  • Baking powder, 1 tablespoon (15 g)
  • Granulated sugar, 1 tablespoon (12 g)
  • Salt, 1/2 teaspoon (3 g)
  • Milk, 1 1/4 cups (300 ml)
  • Eggs, 2 large
  • Unsalted butter, melted, 1/4 cup (60 g)
  • Vanilla extract, 1 teaspoon (5 ml)
  • Honey, 1/4 cup (85 g)
  • Butter, softened, 1/2 cup (115 g)
  • Smoked paprika, 1/2 teaspoon (1 g)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the turkey bacon on a baking sheet in a single layer.
  3. Brush the bacon with maple syrup.
  4. Bake the bacon for 15-20 minutes until crispy, then set aside.
  5. In a large bowl, whisk together flour, baking powder, granulated sugar, and salt.
  6. In a separate bowl, mix milk, eggs, melted butter, and vanilla extract.
  7. Pour the wet ingredients into the dry ingredients and stir until just combined.
  8. Preheat a non-stick skillet or griddle over medium heat.
  9. Pour 1/4 cup of pancake batter onto the skillet for each pancake.
  10. Cook pancakes until bubbles form on the surface, then flip and cook until golden brown.
  11. Repeat until all batter is used, keeping pancakes warm in the oven if necessary.
  12. In a small bowl, combine softened butter, honey, and smoked paprika.
  13. Whisk until smooth and well combined to make the honey butter.
  14. Assemble sliders by layering a pancake, a strip of bacon, and another pancake.
  15. Serve the sliders with a dollop of honey butter on top.

Notes

  • For crispy turkey bacon, coat each strip with maple syrup before baking for a full flavor boost
  • Avoid over-mixing the pancake batter; a few lumps are acceptable for tender pancakes
  • Keep pancakes warm in a low oven (200°F/93°C) to retain their softness until ready to serve
