Ingredients
- 4 slices of good quality bread (4 slices/100g)
- 6-8 slices of double smoked cheddar cheese (6-8 slices/150-200g)
- 4 slices of beef bacon (4 slices/100g)
- 3 tablespoons of vegetable oil (3 tbsp/45ml)
Instructions
- Warm a skillet over medium-high heat.
- Fry the beef bacon strips until they reach your preferred level of crispiness.
- Apply oil to two slices of bread and set them in the heated skillet with the oiled side facing down. Arrange enough slices of smoked cheddar to cover each piece of bread, then place two strips of bacon on each.
- Spread oil on the remaining slices of bread and lay them on top of the assembled pieces in the skillet.
- Once the bottom is golden and crispy, turn each sandwich over. Keep cooking until the other side also turns golden brown.
- Take the sandwiches out of the skillet. Cut them diagonally and serve with rhubarb chutney or ketchup.
