Ingredients
- 3 cups cabbage (finely shredded)
- 1/2 cup smoked Gouda (or alternative cheese, like Havarti or Parmesan)
- 1 tablespoon fresh dill (minced)
- 2 teaspoons fresh thyme (chopped)
- 1 teaspoon sea salt
- 6 tablespoons milk
- 1/4 cup sour cream
- 2 eggs
- 1/2 cup flour (all-purpose, Einkorn, or whole wheat)
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/4 teaspoon sea salt
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Lightly butter your 8-inch cast-iron skillet and set it aside.
- Combine the shredded cabbage, cheese, fresh herbs, and salt in a medium bowl. Mix until well combined.
- Transfer the mixture to the prepared skillet evenly.
- Whisk together the milk, sour cream, and eggs in a separate small bowl until smooth.
- Gradually add in the flour, baking powder, baking soda, and salt. Stir until just combined.
- Pour this mixture over the cabbage filling, ensuring to lift the cabbage gently with a fork to distribute the batter evenly.
- Bake for about 30 minutes, or until the center is set and the top reaches a beautiful golden brown.
- Garnish with fresh dill and thyme before serving.
