Description

A comforting and hearty slow-cooker turkey chili, infused with rich flavors and easy to prepare, perfect for chilly nights or gatherings.


Ingredients

  • 1 tbsp neutral oil
  • 1 red onion, chopped
  • 1 green bell pepper, chopped
  • lbs ground turkey (93% lean ideal)
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 (28 oz) can chopped tomatoes
  • 1 (15 oz) can black beans, rinsed
  • 1 (15 oz) can kidney beans, rinsed
  • 1½ cups low-sodium chicken broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt & pepper to taste
  • Shredded cheddar & green onions (for garnish)


Instructions

  1. In a large skillet, heat the neutral oil over medium heat. Add the chopped onion and green bell pepper, sautéing for about 3–4 minutes until tender.
  2. Add the ground turkey, breaking it up as it cooks, until browned and fully cooked through.
  3. Incorporate minced garlic and tomato paste, stirring for about a minute until fragrant.
  4. Transfer the mixture to a slow cooker.
  5. Add chopped tomatoes, black beans, kidney beans, chicken broth, chili powder, cumin, oregano, salt, and pepper to the slow cooker. Stir well to combine.
  6. Set the slow cooker to LOW for 6–8 hours or HIGH for 3–4 hours, stirring halfway through if possible.
  7. Once cooked, taste and adjust seasonings as necessary. For a zesty kick, add a splash of lime juice.
  8. Serve hot, garnished with shredded cheddar cheese and green onions.

Notes

For deeper flavor, consider adding smoked paprika or hot sauce. You can customize the beans and spices to your preference.
