Ingredients
- 2 pounds (900 g) beef chuck, cut into 1-inch cubes
- 2 tablespoons (30 ml) vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons (30 g) chili powder
- 1 tablespoon (15 g) ground cumin
- 1 teaspoon (5 g) paprika
- 1/2 teaspoon (2.5 g) cayenne pepper
- 1 teaspoon (5 g) salt
- 1/2 teaspoon (2.5 g) black pepper
- 2 cups (480 ml) beef broth
- 1 can (14.5 ounces or 411 g) diced tomatoes, undrained
- 1 can (6 ounces or 170 g) tomato paste
- 1 can (15 ounces or 425 g) kidney beans, drained and rinsed
- 1 can (15 ounces or 425 g) black beans, drained and rinsed
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
- Add the beef cubes to the skillet and brown on all sides, working in batches if necessary.
- Transfer the browned beef to the slow cooker.
- In the same skillet, add the remaining tablespoon of vegetable oil.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for another 1 minute.
- Add the chili powder, ground cumin, paprika, cayenne pepper, salt, and black pepper to the skillet.
- Stir to coat the onion and garlic with the spices, cooking for 1 minute.
- Pour in the beef broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Transfer the contents of the skillet to the slow cooker.
- Add the diced tomatoes, tomato paste, kidney beans, black beans, green bell pepper, and red bell pepper to the slow cooker.
- Stir everything together until well combined.
- Cover the slow cooker and cook on low heat for 8-10 hours or on high heat for 4-5 hours.
- Taste and adjust seasoning if needed before serving.
