A comforting and hearty meal featuring tender steak and flavorful vegetables, perfect for any night of the week.
Ingredients
- 2 lbs round steak or chuck steak, tenderized
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 (14.5 oz) can diced tomatoes
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Italian seasoning
- 1 tbsp cornstarch (optional, for thickening)
- 2 tbsp water (if using cornstarch)
Instructions
- Pat the steak dry, season with salt and pepper, and dredge lightly in flour.
- Heat oil in a skillet, brown the steak on both sides, and transfer to the slow cooker.
- Add onion, garlic, carrots, celery, diced tomatoes, beef broth, Worcestershire sauce, and Italian seasoning to the slow cooker. Stir gently.
- Cover and cook on low for 360-480 minutes or high for 180-240 minutes until meat is tender.
- If desired, mix cornstarch and water into a slurry and stir into the sauce 30 minutes before the end of cooking.
- Taste and adjust seasoning. Serve with mashed potatoes, rice, or crusty bread, and garnish with fresh herbs.
Notes
Consider adding a splash of broth after searing for extra flavor. Feel free to experiment with different vegetables.
