Description

A comforting and hearty meal featuring tender steak and flavorful vegetables, perfect for any night of the week.


Ingredients

  • 2 lbs round steak or chuck steak, tenderized
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1 tbsp cornstarch (optional, for thickening)
  • 2 tbsp water (if using cornstarch)


Instructions

  1. Pat the steak dry, season with salt and pepper, and dredge lightly in flour.
  2. Heat oil in a skillet, brown the steak on both sides, and transfer to the slow cooker.
  3. Add onion, garlic, carrots, celery, diced tomatoes, beef broth, Worcestershire sauce, and Italian seasoning to the slow cooker. Stir gently.
  4. Cover and cook on low for 360-480 minutes or high for 180-240 minutes until meat is tender.
  5. If desired, mix cornstarch and water into a slurry and stir into the sauce 30 minutes before the end of cooking.
  6. Taste and adjust seasoning. Serve with mashed potatoes, rice, or crusty bread, and garnish with fresh herbs.

Notes

Consider adding a splash of broth after searing for extra flavor. Feel free to experiment with different vegetables.
