Ingredients

  • – 3 pounds (1.4 kg) baby potatoes, halved (or 7-8 cups peeled and cubed red or russet potatoes)
  • – 1 pound (450 g) beef sausage, sliced (4-5 links)
  • – 1 pound (450 g) green beans, cut into 3” pieces (fresh, frozen, or canned (2 15-oz cans, drained)
  • – 1 package ranch seasoning or 2-3 tablespoons (38 ml) homemade ranch dressing mix
  • – 3 teaspoons (15 ml) cajun seasoning, store-bought or homemade*
  • – 1 cup (240 ml) beef broth
  • – 6 tablespoons (85 g) vegetable oil, sliced into 6 pieces


Instructions

  1. Place the halved potatoes, sliced beef sausage, and cut green beans into a 6-quart slow cooker.
  2. Dust the mixture with ranch dressing mix and Cajun spice blend.
  3. Add the beef broth, then mix everything thoroughly to ensure the sausage and veggies are well-coated with the spices.
  4. Distribute the vegetable oil, divided into 6 pieces, evenly over the top of the vegetables.
  5. Set the slow cooker to LOW and let it cook for 6-8 hours, or choose HIGH for a cooking time of 3-4 hours, until the potatoes are soft and can be easily pierced with a fork.
  6. Serve right away!
