A hearty slow-cooked meal featuring tender chicken and potatoes enveloped in a creamy garlic sauce.
Ingredients
- 2 pounds potatoes, cut into 1 1/2 – 2 inch chunks
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 3/4 teaspoon ground black pepper
- 1/2 teaspoon paprika
- 2 pounds skinless, boneless chicken breasts
- 1 cup creamy Parmesan garlic sauce
- 1/2 cup water or chicken stock
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese (optional)
- 1 tablespoon chopped fresh parsley, or to taste (optional)
Instructions
- Combine potatoes, olive oil, 3/4 teaspoon salt, 1/2 teaspoon black pepper, and paprika in the bottom of a slow cooker, stirring until thoroughly coated.
- Place chicken pieces on top of the potato mixture and sprinkle with the remaining salt and pepper.
- Whisk together the Parmesan garlic sauce and water in a bowl until well combined. Pour this mixture over the chicken and potatoes.
- Cook on High for 4 hours or on Low for 6 hours. The chicken should be cooked through, and the potatoes should be tender.
- During the last 20 minutes of cooking, add the mozzarella and Parmesan. Cook, covered, until the cheese melts.
- Before serving, sprinkle with chopped parsley for a burst of freshness.
Notes
For additional flavor, consider marinating the chicken in the Parmesan garlic sauce for a couple of hours before cooking. Experiment with vegetables like carrots, green beans, or bell peppers for a delicious twist.
