Ingredients
- – 4 boneless skinless chicken breasts (24 oz / 680g)
- – 2 tablespoons (28g) vegetable oil
- – salt and pepper to taste
- – 2 teaspoons (4g) Italian seasoning
- – 1 cup (185g) uncooked white rice
- – 2 ¼ cups (530ml) vegetable broth
- – juice of 1 lemon
- – 1 teaspoon (2g) Italian seasoning
Instructions
- Warm vegetable oil over medium heat in a large skillet or pan with a lid. Sprinkle the chicken breasts with salt, pepper, and some Italian seasoning. Lightly sear the chicken in the oil for 1-2 minutes on each side. (The chicken will not be fully cooked yet.) Remove the chicken and set aside on a plate.
- Into the same pan, add the uncooked rice, vegetable broth, lemon juice, and the rest of the Italian seasoning. Place the chicken breasts on top of the rice mixture, cover with the lid, and let it cook over medium-low heat for 20-25 minutes until the liquid is absorbed.
- If you like, you can finish with a sprinkle of fresh parsley or cilantro and serve with lemon wedges for extra flavor. Enjoy right away.
