Ingredients

  • 1 ½ pounds (680 g) boneless, skinless chicken thighs or chicken breasts
  • ⅓ cup (80 ml) soy sauce
  • ⅓ cup (80 ml) honey
  • 2 tablespoons (30 ml) tomato paste
  • 2 teaspoons (10 ml) chili paste (sambal oelek, sriracha, or hot sauce of choice)
  • 4 cloves garlic, minced
  • 1 tablespoon (15 ml) rice vinegar
  • 2 tablespoons (15 g) cornstarch
  • Prepared brown rice, quinoa, or cauliflower rice
  • Toasted sesame seeds
  • Chopped green onion


Instructions

  1. Position the chicken at the base of a slow cooker that holds at least 6 quarts. In a separate bowl or a large measuring container, blend the soy sauce, honey, tomato paste, chili paste, garlic, and rice vinegar until well combined.
  2. Drizzle this mixture over the chicken. Secure the lid and set the slow cooker to cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the chicken’s internal temperature is 165 degrees F as indicated by a thermometer. If you have the opportunity, turn the chicken over midway through the cooking process to ensure both sides are covered. (If not, don’t worry; it will still taste great.)
  3. Transfer the chicken to a dish and allow it to cool slightly. Mix the cornstarch into the liquid remaining in the slow cooker. Cover and heat on HIGH for 15 minutes, stirring occasionally, until the sauce gains a slightly thicker consistency. To achieve a thicker sauce, you can extend the cooking time to 30 minutes in the slow cooker OR use the stovetop method described next.
  4. For quicker thickening, move the sauce to a medium saucepan after incorporating the cornstarch. Simmer on the stove over medium heat, stirring frequently, until the sauce becomes thick, about 5 to 10 minutes. (If your slow cooker insert is designed for stovetop use, you can place it directly on the stove, but only do so if you are CERTAIN it is safe, or it may crack.)
  5. Once the chicken is cool enough, shred it using two forks or your hands, and return it to the slow cooker. If you thickened the sauce on the stove, pour it back into the slow cooker now. Mix the chicken well with the sauce. Serve it over rice, garnished with chopped green onions and sesame seeds.
