Ingredients
- 4 large yellow onions, thinly sliced
- 4 tablespoons unsalted butter, melted
- 5 cups beef or vegetable broth
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon dried thyme
- 1 bay leaf
- Freshly ground black pepper, to taste
- 1 loaf French bread or baguette, sliced (for serving)
- 1-2 cups grated gruyère or mozzarella cheese (for topping)
Instructions
- Melt the unsalted butter in a stovetop pan over medium heat.
- Add the thinly sliced onions, stirring occasionally.
- Cook until the onions are caramelized and golden brown, approximately 25 minutes.
- Transfer the caramelized onions to the slow cooker.
- Pour in the broth and add salt, sugar, thyme, bay leaf, and pepper.
- Stir gently to combine and cover with the lid.
- Cook on low for 6-8 hours or high for 3-4 hours.
- When ready to serve, preheat the oven broiler.
- Ladle the soup into oven-safe bowls, top with sliced French bread and cheese.
- Place under the broiler until cheese is bubbly and golden, about 2-3 minutes.
