Description

A warm and comforting French onion soup made effortlessly in a slow cooker, featuring caramelized onions, rich broth, and bubbly cheese.


Ingredients

  • 4 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter, melted
  • 5 cups beef or vegetable broth
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Freshly ground black pepper, to taste
  • 1 loaf French bread or baguette, sliced (for serving)
  • 1-2 cups grated gruyère or mozzarella cheese (for topping)


Instructions

  1. Melt the unsalted butter in a stovetop pan over medium heat.
  2. Add the thinly sliced onions, stirring occasionally.
  3. Cook until the onions are caramelized and golden brown, approximately 25 minutes.
  4. Transfer the caramelized onions to the slow cooker.
  5. Pour in the broth and add salt, sugar, thyme, bay leaf, and pepper.
  6. Stir gently to combine and cover with the lid.
  7. Cook on low for 6-8 hours or high for 3-4 hours.
  8. When ready to serve, preheat the oven broiler.
  9. Ladle the soup into oven-safe bowls, top with sliced French bread and cheese.
  10. Place under the broiler until cheese is bubbly and golden, about 2-3 minutes.
