Ingredients

  • 1 can (425 g) tomato sauce
  • 2 tbsp (30 ml). chili powder
  • 1 tbsp (15 ml). cumin
  • 1 tbsp (15 ml). salt
  • 2 tsp (10 ml). paprika
  • 1 tsp (5 ml). black pepper
  • 3 garlic cloves, finely chopped
  • 1 large onion, chopped
  • 6 large boneless, skinless chicken breasts (about 2 kg)
  • Flour tortillas, shredded iceberg lettuce, chopped tomato, shredded cheddar cheese, sour cream, salsa, for serving


Instructions

  1. In a slow cooker with a capacity of 6 to 8 quarts, combine the tomato sauce, chili powder, cumin, salt, paprika, black pepper, minced garlic, and chopped onion until they are thoroughly mixed. Place the chicken in the mixture, making sure it is completely covered by the sauce.
  2. Secure the lid and let it cook until the chicken has fully cooked through and reaches an internal temperature of 165°F. Set it to low for 4 to 6 hours or choose high for 2 to 3 hours.
  3. Transfer the chicken to a large cutting board. Once it has cooled enough to be handled, cut the chicken into small pieces. Place the pieces back into the sauce and mix them well.
  4. Cover the slow cooker again and continue cooking on low for an additional 15 minutes.
  5. Serve the chicken on tortillas and garnish with shredded lettuce, chopped tomatoes, cheddar cheese, sour cream, and salsa.
