A flavorful steak recipe featuring a creamy, herb-infused cowboy butter that elevates any meal to steakhouse quality.
Ingredients
- 1 stick of butter, mostly melted
- 4 cloves of garlic, minced
- 1/2 lemon for zest and 1 tablespoon of juice
- 1 tablespoon of Dijon mustard
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne or red pepper flakes
- 1/2 teaspoon of dried thyme
- 1 teaspoon of red pepper flakes or cayenne powder
- 1 tablespoon of chives or green onions, sliced
- 2 tablespoons of fresh parsley, minced
- Salt and pepper, adjusted to taste
- Optional: rosemary sprig and smashed garlic for cast iron preparation
Instructions
- Let the steak reach room temperature and pat it dry.
- Season generously with salt, pepper, and minced garlic.
- Heat a cast iron skillet over high heat until sizzling hot.
- Add a splash of avocado oil to the skillet and place the seasoned steak in.
- Sear one side for about 4-5 minutes, then flip the steak.
- Immediately add the mostly melted butter, minced garlic, and herbs.
- Spoon the melted butter over the steak as it continues to cook.
- Use a meat thermometer to check for medium-rare doneness (130°F).
- Let the steak rest for at least 5 minutes.
- In a bowl, mix softened butter with parsley, green onions, Dijon mustard, lemon juice, zest, and spices; whisk until creamy.
- Slice the steak against the grain and top with a dollop of cowboy butter.
