Description

A flavorful steak recipe featuring a creamy, herb-infused cowboy butter that elevates any meal to steakhouse quality.


Ingredients

  • 1 stick of butter, mostly melted
  • 4 cloves of garlic, minced
  • 1/2 lemon for zest and 1 tablespoon of juice
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne or red pepper flakes
  • 1/2 teaspoon of dried thyme
  • 1 teaspoon of red pepper flakes or cayenne powder
  • 1 tablespoon of chives or green onions, sliced
  • 2 tablespoons of fresh parsley, minced
  • Salt and pepper, adjusted to taste
  • Optional: rosemary sprig and smashed garlic for cast iron preparation


Instructions

  1. Let the steak reach room temperature and pat it dry.
  2. Season generously with salt, pepper, and minced garlic.
  3. Heat a cast iron skillet over high heat until sizzling hot.
  4. Add a splash of avocado oil to the skillet and place the seasoned steak in.
  5. Sear one side for about 4-5 minutes, then flip the steak.
  6. Immediately add the mostly melted butter, minced garlic, and herbs.
  7. Spoon the melted butter over the steak as it continues to cook.
  8. Use a meat thermometer to check for medium-rare doneness (130°F).
  9. Let the steak rest for at least 5 minutes.
  10. In a bowl, mix softened butter with parsley, green onions, Dijon mustard, lemon juice, zest, and spices; whisk until creamy.
  11. Slice the steak against the grain and top with a dollop of cowboy butter.
