Description

A warm and hearty Shepherd’s Pie Soup made with ground beef, tender potatoes, and mixed vegetables, topped with melted cheese.


Ingredients

  • 1 pound ground beef
  • 2 large potatoes, diced
  • 1 cup shredded cheese
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Stir in the ground beef and cook until browned.
  4. Add diced potatoes, mixed vegetables, beef broth, Worcestershire sauce, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the potatoes are tender.
  6. Stir in the shredded cheese until melted.
