A comforting and hearty soup that combines the flavors of traditional Shepherd’s Pie in a warm broth, featuring ground beef, potatoes, and mixed vegetables.
Ingredients
- 1 pound ground beef
- 2 cups potatoes, diced
- 1 cup cheese, shredded
- 2 cups mixed vegetables (peas, carrots, corn)
- 4 cups beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, and sauté until translucent.
- Add the ground beef to the pot and cook until browned. Drain any excess fat.
- Stir in the diced potatoes and mixed vegetables.
- Pour in the beef broth and bring to a boil.
- Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the shredded cheese until melted and season with salt and pepper.
