Description

Ingredients

  • 1 pound of sausage (Italian or your choice)
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon dried rosemary (optional)
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the cubed sweet potatoes and sausage on a large sheet pan.
  3. Drizzle with olive oil, and season with salt and pepper. Toss to combine.
  4. Mix together the honey, minced garlic, soy sauce, and rosemary in a small bowl.
  5. Pour the honey garlic mixture over the sausage and sweet potatoes, tossing to coat evenly.
  6. Spread everything in a single layer on the sheet pan.
  7. Bake for about 25-30 minutes, or until the sweet potatoes are tender and the sausage is cooked through, stirring halfway through.
  8. Garnish with fresh parsley if desired and serve hot.
