Ingredients
- 1 pound of sausage (Italian or your choice)
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 3 tablespoons honey
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon dried rosemary (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the cubed sweet potatoes and sausage on a large sheet pan.
- Drizzle with olive oil, and season with salt and pepper. Toss to combine.
- Mix together the honey, minced garlic, soy sauce, and rosemary in a small bowl.
- Pour the honey garlic mixture over the sausage and sweet potatoes, tossing to coat evenly.
- Spread everything in a single layer on the sheet pan.
- Bake for about 25-30 minutes, or until the sweet potatoes are tender and the sausage is cooked through, stirring halfway through.
- Garnish with fresh parsley if desired and serve hot.
