Description

An easy and flavorful sheet pan dinner featuring roasted chicken thighs and zucchini, glazed with a spicy hot honey marinade.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 medium zucchinis, sliced into half-moons
  • 1/4 cup hot honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Mix the marinade in a bowl by combining hot honey, minced garlic, soy sauce, olive oil, salt, black pepper, paprika, and crushed red pepper flakes.
  2. Pour half of the marinade over the chicken thighs in a large bowl or plastic bag, ensuring they are fully coated. Marinate for at least 10 minutes.
  3. Slice the zucchinis and arrange them on a prepared baking sheet. Drizzle with the remaining marinade and toss to coat.
  4. Remove the chicken from the marinade and place it skin-side up on the sheet pan with the zucchinis.
  5. Bake in a preheated oven at 400°F (200°C) for 25-30 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
  6. Broil for an additional 2-3 minutes if you desire crispy chicken skin.
  7. Rest the chicken for a few minutes before garnishing with chopped parsley and serving.

Notes

Marinating the chicken overnight enhances flavor. Adjust the hot honey to your spice preference.
