Description

A flavorful side dish made easily in a slow cooker with baby potatoes and Lipton onion soup mix.


Ingredients

  • 2 pounds baby potatoes or Yukon Gold potatoes
  • 1 packet Lipton onion soup mix
  • 1 cup beef or chicken broth
  • ¼ cup unsalted butter, cut into small pieces
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Wash the potatoes thoroughly; peel if desired.
  2. Place the potatoes in the bottom of the slow cooker.
  3. Sprinkle the Lipton onion soup mix over the potatoes.
  4. Pour in the beef or chicken broth.
  5. Dot the top with small pieces of butter.
  6. Season with salt and pepper.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  8. Check for tenderness, garnish with parsley if desired, and serve.

Notes

For firmer potatoes, use the shorter cooking time. You can also add sautéed onions and garlic for an even richer flavor.
