Ingredients
- 2 pounds Yukon Gold or baby potatoes
- 1/2 cup butter (Can substitute with olive oil)
- 1 packet Lipton Onion Soup Mix
- 2 cups beef or chicken broth (Use vegetable broth for vegetarian)
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Rinse and cut the potatoes, placing them in the slow cooker.
- Add the Lipton Onion Soup Mix, salt, and pepper on top of the potatoes.
- Pour the broth over the mixture, ensuring the potatoes are mostly submerged.
- Place the lid on the slow cooker and set it to low, cooking for 360-480 minutes or until the potatoes are tender.
Notes
For even creamier potatoes, mash them lightly before serving. Leftovers can be stored in the fridge for 3-4 days.
