  • 2 pounds baby potatoes or Yukon Gold potatoes
  • 1 packet Lipton onion soup mix
  • 1 cup beef broth or chicken broth
  • ¼ cup unsalted butter, cut into small pieces
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Wash the potatoes thoroughly; peel if desired.
  2. Place the potatoes in the bottom of the slow cooker in a single layer.
  3. Sprinkle the Lipton onion soup mix over the potatoes, ensuring they are well-coated.
  4. Pour in the beef or chicken broth.
  5. Dot the top with small pieces of butter.
  6. Season with salt and pepper as needed, then cover the slow cooker with the lid.
  7. Cook on low for 360-480 minutes (6-8 hours) or high for 180-240 minutes (3-4 hours), checking for tenderness with a fork during the last hour.
