- 2 pounds baby potatoes or Yukon Gold potatoes
- 1 packet Lipton onion soup mix
- 1 cup beef broth or chicken broth
- ¼ cup unsalted butter, cut into small pieces
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Wash the potatoes thoroughly; peel if desired.
- Place the potatoes in the bottom of the slow cooker in a single layer.
- Sprinkle the Lipton onion soup mix over the potatoes, ensuring they are well-coated.
- Pour in the beef or chicken broth.
- Dot the top with small pieces of butter.
- Season with salt and pepper as needed, then cover the slow cooker with the lid.
- Cook on low for 360-480 minutes (6-8 hours) or high for 180-240 minutes (3-4 hours), checking for tenderness with a fork during the last hour.
- Garnish with parsley and serve warm.
