Description

These savory breakfast rolls filled with scrambled eggs, cheese, and meats make for a delicious morning treat that brings comfort and nostalgia to any breakfast gathering.


Ingredients

  • 3 cups all-purpose flour
  • 1 packet (2¼ tsp) instant yeast
  • 1 cup warm milk
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 tbsp melted butter
  • 6 large eggs, scrambled
  • 1 cup cooked sausage, bacon, or ham (chopped)
  • 1½ cups shredded cheddar or Colby-Jack cheese
  • ½ cup chopped green onions (optional)
  • Salt and pepper to taste
  • 1 tbsp butter (for brushing the tops)


Instructions

  1. In a bowl, combine warm milk, sugar, and yeast. Let it sit for 5 minutes until the mixture becomes frothy.
  2. Add flour, salt, and melted butter. Mix thoroughly and knead until smooth, which should take about 5-10 minutes.
  3. Place the dough in a greased bowl and cover it with a clean cloth. Let it rise for 1 hour in a warm area.
  4. In a skillet, scramble eggs, seasoning them with salt and pepper. Once cooked, stir in the chopped sausage or bacon, green onions, and cheese.
  5. Roll out the dough into a large rectangle on a floured surface. Cut it into 8–10 squares.
  6. Place a spoonful of the filling into the center of each square. Fold the edges over to form rolls, sealing the seams underneath.
  7. Place the rolls on a baking sheet lined with parchment paper. Brush the tops with butter.
  8. Bake in a preheated oven at 375°F for 18–22 minutes, or until the rolls turn golden brown.
  9. Let them cool slightly before serving or cool completely to store for later.
