Description

A hearty and nostalgic dish combining savory sausage with sweet roasted potatoes in a delightful honey garlic sauce.


Ingredients

  • 1 lb sausage (Italian or your choice)
  • 2 large sweet potatoes, peeled and diced
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine diced sweet potatoes with olive oil, salt, and pepper. Toss well.
  3. Spread the sweet potatoes on a baking sheet and roast for 20 minutes.
  4. While the sweet potatoes are roasting, mix honey, garlic, and soy sauce in a small bowl.
  5. After 20 minutes, add the sausage to the baking sheet with the sweet potatoes.
  6. Drizzle the honey garlic sauce over the sausage and sweet potatoes. Toss to coat evenly.
  7. Return to the oven and roast for an additional 15-20 minutes, until the sausage is cooked through and sweet potatoes are tender.
  8. Serve hot, garnished with parsley if desired.

Notes

For added spice, consider incorporating red pepper flakes into the honey garlic sauce.
