A hearty and nostalgic dish combining savory sausage with sweet roasted potatoes in a delightful honey garlic sauce.
Ingredients
- 1 lb sausage (Italian or your choice)
- 2 large sweet potatoes, peeled and diced
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine diced sweet potatoes with olive oil, salt, and pepper. Toss well.
- Spread the sweet potatoes on a baking sheet and roast for 20 minutes.
- While the sweet potatoes are roasting, mix honey, garlic, and soy sauce in a small bowl.
- After 20 minutes, add the sausage to the baking sheet with the sweet potatoes.
- Drizzle the honey garlic sauce over the sausage and sweet potatoes. Toss to coat evenly.
- Return to the oven and roast for an additional 15-20 minutes, until the sausage is cooked through and sweet potatoes are tender.
- Serve hot, garnished with parsley if desired.
Notes
For added spice, consider incorporating red pepper flakes into the honey garlic sauce.
