Ingredients

  • 2 large chicken breasts (900g)
  • 1/2 teaspoon (3 ml) garlic powder
  • 1/2 teaspoon (3 ml) chili powder
  • Salt & pepper to taste
  • 2 tablespoons (30 ml) olive oil
  • 1/2 medium onion, chopped
  • 1 (290g) can diced tomatoes & green chilies, drained
  • 1 (400g) can black beans, drained & rinsed
  • 1 (340g) can corn, drained
  • 1/2 teaspoon (3 ml) smoked paprika
  • 1 cup (240 ml) shredded cheese blend
  • Fresh cilantro, chopped (optional, to taste)


Instructions

  1. Heat the oven to 400°F and position the oven rack in the center.
  2. Slice the chicken breasts horizontally to create 4 thinner pieces. Apply garlic powder, chili powder, and a bit of salt and pepper to both sides.
  3. Pour the olive oil into a skillet that can go in the oven and set it over medium-high heat. When the oil is hot, place the chicken in the skillet and cook each side for around 3-4 minutes until they are lightly golden. Remove the chicken from the skillet.
  4. Introduce the chopped onion to the skillet and cook for about 5 minutes until it becomes soft and slightly golden.
  5. Mix in the drained tomatoes with green chilies, black beans, corn, and smoked paprika. Allow this mixture to warm up for a few minutes, making sure to scrape up any flavorful bits stuck to the skillet.
  6. Return the chicken to the skillet, spooning some of the tomato, bean, and corn mixture over it. Scatter the shredded cheese over everything, focusing on the chicken.
  7. Transfer the skillet to the oven and bake for 5-7 minutes until the chicken is thoroughly cooked (internal temperature of 165°F) and the cheese has melted. If you prefer the cheese to be browned, broil it briefly while keeping an eye on it to prevent burning.
  8. Garnish with fresh chopped cilantro if desired, and serve right away.
