Ingredients
- 2 large chicken breasts (900g)
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) chili powder
- Salt & pepper to taste
- 2 tablespoons (30 ml) olive oil
- 1/2 medium onion, chopped
- 1 (290g) can diced tomatoes & green chilies, drained
- 1 (400g) can black beans, drained & rinsed
- 1 (340g) can corn, drained
- 1/2 teaspoon (3 ml) smoked paprika
- 1 cup (240 ml) shredded cheese blend
- Fresh cilantro, chopped (optional, to taste)
Instructions
- Heat the oven to 400°F and position the oven rack in the center.
- Slice the chicken breasts horizontally to create 4 thinner pieces. Apply garlic powder, chili powder, and a bit of salt and pepper to both sides.
- Pour the olive oil into a skillet that can go in the oven and set it over medium-high heat. When the oil is hot, place the chicken in the skillet and cook each side for around 3-4 minutes until they are lightly golden. Remove the chicken from the skillet.
- Introduce the chopped onion to the skillet and cook for about 5 minutes until it becomes soft and slightly golden.
- Mix in the drained tomatoes with green chilies, black beans, corn, and smoked paprika. Allow this mixture to warm up for a few minutes, making sure to scrape up any flavorful bits stuck to the skillet.
- Return the chicken to the skillet, spooning some of the tomato, bean, and corn mixture over it. Scatter the shredded cheese over everything, focusing on the chicken.
- Transfer the skillet to the oven and bake for 5-7 minutes until the chicken is thoroughly cooked (internal temperature of 165°F) and the cheese has melted. If you prefer the cheese to be browned, broil it briefly while keeping an eye on it to prevent burning.
- Garnish with fresh chopped cilantro if desired, and serve right away.
