Ingredients

  • 1/2 cup (120 ml) olive oil
  • 1 large onion, chopped
  • 2 large carrots, chopped

  • 1 jalapeño, finely diced, seeds optional
  • 1 teaspoon (5 ml) dried rosemary
  • 1 teaspoon (5 ml) dried thyme
  • 1/2 teaspoon (3 ml) kosher salt
  • 1/2 teaspoon (3 ml) freshly ground black pepper
  • 4 garlic cloves, minced
  • 1 can diced tomatoes, strain and set aside reserved liquid (preferably fire roasted tomatoes)
  • 6 cups (1.4 L) vegetable broth
  • 3 cups (720 ml) spinach leaves, chopped
  • 1 can (540 mL) white kidney beans, drained and rinsed
  • 1 bay leaf
  • Croutons
  • Grated Parmesan cheese (use halal-friendly alternative)
  • Chopped parsley
  • Dried chillies, optional


Instructions

  1. Warm the olive oil in a 5-quart Dutch oven on medium-low heat.
  2. Introduce the chopped onion, carrots, fennel, and jalapeño to the pot. Stir them around, then cook until the veggies are soft, about 8-12 minutes.
  3. Incorporate rosemary, thyme, salt, pepper, and garlic, cooking for 1-2 minutes until aromatic.
  4. Pour in the strained tomatoes and mix. Let it cook for 3-4 minutes.
  5. Add the reserved tomato liquid, vegetable broth, white kidney beans, and bay leaf. Bring everything to a boil, then lower the heat to a gentle simmer. Cover the pot and let it cook for 15-30 minutes, or until the vegetables are fully tender.
  6. Introduce the chopped spinach to the soup and let it cook until it wilts, about 3-5 minutes.
  7. Remove the bay leaf, taste the soup, and adjust the seasoning as needed.
  8. Serve the soup in bowls, topping with croutons, grated Parmesan cheese, and chopped parsley.
