Description

Ingredients

  • 2 cups (475 ml) cooked shredded chicken
  • 1 teaspoon (5 g) ground cumin
  • 1 teaspoon (5 g) chili powder
  • 1 teaspoon (5 g) garlic powder
  • 1 teaspoon (5 g) onion powder
  • Salt, to taste
  • 8 small flour or corn tortillas
  • 1 cup (115 g) shredded cheese (such as cheddar or Monterey Jack)
  • Vegetable oil, for frying
  • For Fresh Salsa:
  • 2 medium tomatoes, diced
  • 1/2 cup (75 g) diced red onion
  • 1/4 cup (15 g) chopped fresh cilantro
  • 1 jalapeño, seeded and minced
  • 1 tablespoon (15 ml) lime juice
  • Salt, to taste
  • For Guacamole:
  • 2 ripe avocados, peeled and pitted
  • 1 tablespoon (15 ml) lime juice
  • 1/4 cup (15 g) chopped fresh cilantro
  • 1/4 cup (35 g) diced red onion
  • Salt, to taste


Instructions

  1. In a bowl, combine shredded chicken, cumin, chili powder, garlic powder, onion powder, and salt.
  2. Mix until the chicken is evenly coated with spices.
  3. Lay a tortilla flat and sprinkle 2 tablespoons of shredded cheese in the center.
  4. Add about 1/4 cup of the seasoned chicken over the cheese.
  5. Roll the tortilla tightly around the filling.
  6. Repeat with remaining tortillas, chicken, and cheese.
  7. Heat vegetable oil in a frying pan over medium heat.
  8. Fry the rolled taquitos, seam side down, until golden brown and crispy, about 3-4 minutes per side.
  9. Drain on paper towels to remove excess oil.
  10. Fresh Salsa:
  11. In a bowl, combine diced tomatoes, red onion, cilantro, and jalapeño.
  12. Add lime juice and salt to taste.
  13. Mix gently and set aside.
  14. Guacamole:
  15. In a separate bowl, mash the avocados with a fork.
  16. Stir in lime juice, cilantro, red onion, and salt to taste.
  17. Mix until well combined.
  18. Serve the taquitos warm with fresh salsa and guacamole on the side.
