Ingredients
- 2 cups (475 ml) cooked shredded chicken
- 1 teaspoon (5 g) ground cumin
- 1 teaspoon (5 g) chili powder
- 1 teaspoon (5 g) garlic powder
- 1 teaspoon (5 g) onion powder
- Salt, to taste
- 8 small flour or corn tortillas
- 1 cup (115 g) shredded cheese (such as cheddar or Monterey Jack)
- Vegetable oil, for frying
- For Fresh Salsa:
- 2 medium tomatoes, diced
- 1/2 cup (75 g) diced red onion
- 1/4 cup (15 g) chopped fresh cilantro
- 1 jalapeño, seeded and minced
- 1 tablespoon (15 ml) lime juice
- Salt, to taste
- For Guacamole:
- 2 ripe avocados, peeled and pitted
- 1 tablespoon (15 ml) lime juice
- 1/4 cup (15 g) chopped fresh cilantro
- 1/4 cup (35 g) diced red onion
- Salt, to taste
Instructions
- In a bowl, combine shredded chicken, cumin, chili powder, garlic powder, onion powder, and salt.
- Mix until the chicken is evenly coated with spices.
- Lay a tortilla flat and sprinkle 2 tablespoons of shredded cheese in the center.
- Add about 1/4 cup of the seasoned chicken over the cheese.
- Roll the tortilla tightly around the filling.
- Repeat with remaining tortillas, chicken, and cheese.
- Heat vegetable oil in a frying pan over medium heat.
- Fry the rolled taquitos, seam side down, until golden brown and crispy, about 3-4 minutes per side.
- Drain on paper towels to remove excess oil.
- Fresh Salsa:
- In a bowl, combine diced tomatoes, red onion, cilantro, and jalapeño.
- Add lime juice and salt to taste.
- Mix gently and set aside.
- Guacamole:
- In a separate bowl, mash the avocados with a fork.
- Stir in lime juice, cilantro, red onion, and salt to taste.
- Mix until well combined.
- Serve the taquitos warm with fresh salsa and guacamole on the side.
