Description

Discover how to make a delicious and comforting roasted tomato soup from scratch. This easy recipe will warm you up and satisfy your taste buds!

Ingredients

  • 3 1/2 pounds (1.6 kg) ripe tomatoes (any small- to medium-sized tomatoes will do)
  • 3 tablespoons (45 ml) vegetable oil, divided
  • fine sea salt and freshly-cracked black pepper
  • 1 large white or yellow onion, diced
  • 5 cloves garlic, minced
  • 3/4 teaspoons (4 g) smoked paprika
  • 1/4 teaspoon (1 ml) crushed red pepper flakes
  • 2 1/2 cups (600 ml) vegetable broth
  • 1/2 cup (120 ml) loosely-packed fresh basil leaves
  • optional toppings: freshly-grated vegetarian-friendly cheese, drizzle of coconut cream or vegetable oil, croutons, dairy-free sour cream or fresh basil

Instructions

  1. Preheat the oven to 450°F. Cut the tomatoes into quarters (or halves if they’re small) and place them cut-side-up on a baking tray. Evenly coat with 2 tablespoons of vegetable oil and sprinkle with a few pinches of fine sea salt and freshly-cracked black pepper. Roast for 30 to 40 minutes until they soften, then move the tray to a cooling rack.
  2. While the tomatoes are roasting, warm the remaining tablespoon of vegetable oil in a large pot over medium-high heat. Add the diced onion and cook for 5 minutes, stirring now and then. Stir in the minced garlic, smoked paprika, and crushed red pepper flakes, cooking for another 2 minutes while stirring frequently.
  3. Combine the vegetable broth, fresh basil leaves, and the roasted tomatoes along with their juices in the pot, mixing them together thoroughly.
  4. Use an immersion blender to blend the soup until it reaches the texture you prefer.
  5. Taste and adjust the seasoning with more salt, pepper, and smoked paprika if needed.
  6. Ladle the soup into bowls, add your choice of toppings, and savor it warm!

Notes

  • Consider using a mix of cherry, grape, or heirloom tomatoes for enhanced flavor.
  • Add coconut cream or vegetable oil for a smoother texture before blending.
  • Experiment with toppings like vegetarian-friendly cheese or dairy-free sour cream for richness.
