Description

A delightful side dish of roasted sweet potatoes, drizzled with maple syrup and topped with crunchy walnuts, combining sweet and earthy flavors.

Ingredients

  • 2-3 medium-sized sweet potatoes
  • 2 tablespoons of olive oil
  • Salt to taste
  • Pepper to taste
  • 1/4 cup of pure maple syrup
  • 1/2 cup of chopped walnuts

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes into bite-size pieces.
  3. In a large bowl, toss the sweet potatoes with olive oil, salt, and pepper until evenly coated.
  4. Spread the sweet potatoes on a baking sheet in a single layer.
  5. Roast in the oven for about 25-30 minutes or until tender and slightly caramelized, stirring halfway through.
  6. Drizzle with maple syrup and sprinkle with chopped walnuts.
  7. Return to the oven for an additional 5-10 minutes.
  8. Serve warm as a delightful side dish.

Notes

Choose sweet potatoes of similar sizes for more uniform cooking. Toast walnuts for a nuttier flavor if desired. Adjust maple syrup to your preferred sweetness.
