Description

A comforting dish of roasted sweet potatoes glazed with honey and cinnamon, perfect as a side or a delicious standalone treat.


Ingredients

  • 4 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • Salt to taste
  • Chopped fresh parsley for garnish


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the sweet potatoes into 1-inch cubes.
  3. In a large mixing bowl, combine the sweet potato cubes with olive oil, honey, ground cinnamon, and salt. Toss well to ensure the sweet potatoes are evenly coated.
  4. Spread the coated sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Place the baking sheet in the preheated oven and roast for 25-30 minutes, stirring halfway through for even cooking.
  6. Once roasted, remove the sweet potatoes from the oven and transfer them to a serving dish. Sprinkle with chopped fresh parsley for a pop of color.

Notes

For a hint of heat, consider adding a pinch of cayenne pepper or a dash of nutmeg. Leftovers can be reheated in the oven for 10 minutes for best results.
