A comforting dish of roasted sweet potatoes glazed with honey and cinnamon, perfect as a side or a delicious standalone treat.
Ingredients
- 4 medium sweet potatoes, peeled and cut into 1-inch cubes
- 3 tablespoons olive oil
- 2 tablespoons honey
- 1 teaspoon ground cinnamon
- Salt to taste
- Chopped fresh parsley for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- Peel and cut the sweet potatoes into 1-inch cubes.
- In a large mixing bowl, combine the sweet potato cubes with olive oil, honey, ground cinnamon, and salt. Toss well to ensure the sweet potatoes are evenly coated.
- Spread the coated sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Place the baking sheet in the preheated oven and roast for 25-30 minutes, stirring halfway through for even cooking.
- Once roasted, remove the sweet potatoes from the oven and transfer them to a serving dish. Sprinkle with chopped fresh parsley for a pop of color.
Notes
For a hint of heat, consider adding a pinch of cayenne pepper or a dash of nutmeg. Leftovers can be reheated in the oven for 10 minutes for best results.
