Description

Delightful roasted sweet potato rounds drizzled with honey and sprinkled with feta cheese, perfect for family gatherings.


Ingredients

  • 2 large sweet potatoes, washed and scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ¾ cup crumbled feta cheese
  • ¼ cup honey
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes into ½-inch thick rounds.
  3. Toss the sweet potato rounds in a large bowl with olive oil, salt, black pepper, and smoked paprika until evenly coated.
  4. Arrange the sweet potato slices in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, turning halfway through cooking.
  6. Once golden brown and tender, remove from the oven and allow to cool slightly.
  7. Transfer the roasted sweet potato rounds to a serving platter, sprinkle with crumbled feta, drizzle with honey, and garnish with parsley.
