Ingredients
- 2 large sweet potatoes, washed and scrubbed
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- ¾ cup crumbled feta cheese
- ¼ cup honey
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice the sweet potatoes into ½-inch thick rounds.
- Toss the sweet potato rounds in a large bowl with olive oil, salt, black pepper, and smoked paprika until evenly coated.
- Arrange the sweet potato slices in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 25-30 minutes, turning halfway through cooking.
- Once golden brown and tender, remove from the oven and allow to cool slightly.
- Transfer the roasted sweet potato rounds to a serving platter, sprinkle with crumbled feta, drizzle with honey, and garnish with parsley.
- Serve warm or at room temperature.
