Ingredients
- 4 tbsp vegetable oil (60g)
- 3 medium red bell peppers, roasted, skin and seeds removed (can also use jarred roasted red peppers)
- 1/2 yellow onion, diced
- 1 large carrot, chopped
- 1 celery rib, chopped
- 4 cloves garlic, minced
- 3 1/2 cups vegetable broth (830 ml)
- 1/4 tsp (1 ml) thyme
- 1/4 tsp (1 ml) oregano
- 1/4 tsp (1 ml) dried basil
- 1/4 tsp (1 ml) dried tarragon
- dash of cayenne pepper
- Salt and freshly ground pepper to taste
- 1 tsp (5 ml) sugar
- 1/2 cup coconut cream (120 ml)
- 1 cup grated dairy-free cheese (120g)
- Chopped chives, as garnish
Instructions
- Heat your broiler and cover a baking tray with aluminum foil. Lay the bell peppers on the foil and broil them for roughly 5 minutes on each side until they’re well-charred, then turn them to char all over.
- Once done, take them out of the oven and cover tightly with foil for about 10 minutes. When cooled, remove the skins, stems, and seeds from the peppers. Cut them into strips and keep them aside.
- At the same time, heat 4 tablespoons of vegetable oil in a large pot on medium heat. Toss in the diced onion, minced garlic, chopped celery, carrot, and seasonings; cook, stirring often, for 7-8 minutes until the carrot pieces are soft.
- Introduce the roasted pepper strips and vegetable broth to the pot; let the mixture come to a boil. Lower the heat to medium-low and let it simmer gently for 5 minutes.
- Blend the soup with an immersion blender, or in small batches with a food processor, until smooth. Return it to the pot and incorporate the coconut cream, grated dairy-free cheese, and sugar. Heat gently until the cheese has melted fully.
- Ladle the soup into serving bowls and top with chopped chives. Enjoy with a side of toasted garlic bread.
