Ingredients
- 16 ounces (454 g) cremini mushrooms, quartered, or mixed mushrooms, torn
- 2 tablespoons (30 ml) vegetable oil
- 1 tablespoon (15 ml) balsamic vinegar
- 1 tablespoon (15 ml) soy sauce
- Freshly ground black pepper
- 1 tablespoon (15 ml) chopped fresh parsley
- 1 tablespoon (15 ml) fresh thyme leaves
- Sea salt, to taste
Instructions
- Heat your oven to 450°F and prepare a baking tray by covering it with parchment paper.
- Scatter the mushrooms over the tray, then pour the vegetable oil, balsamic vinegar, and soy sauce on top. Season with black pepper, mix to ensure they’re well-coated, and arrange them evenly on the tray.
- Bake for 18 to 20 minutes, stirring them midway through, until the mushrooms are soft and have a golden-brown edge.
- Take them out of the oven, then mix in the fresh parsley and thyme. Adjust the seasoning with sea salt and pepper as desired, and enjoy.
