Ingredients

  • 16 ounces (454 g) cremini mushrooms, quartered, or mixed mushrooms, torn
  • 2 tablespoons (30 ml) vegetable oil
  • 1 tablespoon (15 ml) balsamic vinegar
  • 1 tablespoon (15 ml) soy sauce
  • Freshly ground black pepper
  • 1 tablespoon (15 ml) chopped fresh parsley
  • 1 tablespoon (15 ml) fresh thyme leaves
  • Sea salt, to taste


Instructions

  1. Heat your oven to 450°F and prepare a baking tray by covering it with parchment paper.
  2. Scatter the mushrooms over the tray, then pour the vegetable oil, balsamic vinegar, and soy sauce on top. Season with black pepper, mix to ensure they’re well-coated, and arrange them evenly on the tray.
  3. Bake for 18 to 20 minutes, stirring them midway through, until the mushrooms are soft and have a golden-brown edge.
  4. Take them out of the oven, then mix in the fresh parsley and thyme. Adjust the seasoning with sea salt and pepper as desired, and enjoy.
