Description

Learn how to make delicious roasted garlic potatoes at home with this easy recipe. Perfectly crispy on the outside, soft on the inside. Try it now!

Ingredients

  • 3 pounds (1.36 kg) small red or white potatoes
  • 1/4 cup (60 ml) vegetable oil
  • 1 1/2 teaspoons (8 ml) kosher salt
  • 1 teaspoon (5 ml) freshly ground black pepper
  • 2 tablespoons (30 ml) minced garlic (6 cloves)
  • 2 tablespoons (30 ml) minced fresh parsley

Instructions

  1. Set your oven to 400 degrees F and let it warm up.
  2. Slice the potatoes into halves or quarters, then combine them in a bowl with the vegetable oil, kosher salt, black pepper, and minced garlic; mix thoroughly until the potatoes are evenly coated.
  3. Arrange the coated potatoes in a single layer on a baking sheet.
  4. Place them in the oven and bake for 45 minutes to an hour until they turn golden and crispy, turning them twice with a spatula during the roasting process to ensure even cooking.
  5. Once done, take the potatoes out of the oven, mix them with the minced fresh parsley, adjust seasoning if needed, and serve while hot.

Notes

  • Consider enhancing the flavor by sprinkling grated Parmesan cheese or smoked paprika before roasting.
  • Try experimenting with herbs like rosemary or thyme to personalize the flavor of your roasted potatoes.
  • For extra crispiness, ensure the potatoes are spread evenly on the baking sheet without overcrowding.
