Creamy and flavorful roasted garlic mashed potatoes that bring warmth and comfort to any gathering.
Ingredients
- 1 head garlic
- 1 tsp olive oil
- 2 pounds red potatoes, washed and cut into quarters
- Kosher salt to taste
- 6 tablespoons butter
- 3/4 cup half and half
- Fresh ground pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the top 1/4 inch off the garlic head, wrap it in foil, and drizzle olive oil over the exposed cloves. Enclose the foil and roast in the oven for about 1 hour.
- In a large pot, combine the cut red potatoes with cold water and 1 teaspoon of kosher salt. Bring to a boil and simmer for about 15 minutes, or until fork-tender.
- Drain the potatoes and return them to the pot. Squeeze the softened roasted garlic cloves into the potatoes.
- Warm the half and half and butter until melted, then pour over the potatoes and garlic. Add salt and pepper to taste, and mash until creamy with some lumps.
- Garnish with fresh herbs and additional butter before serving.
