Description

Creamy and flavorful roasted garlic mashed potatoes that bring warmth and comfort to any gathering.


Ingredients

  • 1 head garlic
  • 1 tsp olive oil
  • 2 pounds red potatoes, washed and cut into quarters
  • Kosher salt to taste
  • 6 tablespoons butter
  • 3/4 cup half and half
  • Fresh ground pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the top 1/4 inch off the garlic head, wrap it in foil, and drizzle olive oil over the exposed cloves. Enclose the foil and roast in the oven for about 1 hour.
  3. In a large pot, combine the cut red potatoes with cold water and 1 teaspoon of kosher salt. Bring to a boil and simmer for about 15 minutes, or until fork-tender.
  4. Drain the potatoes and return them to the pot. Squeeze the softened roasted garlic cloves into the potatoes.
  5. Warm the half and half and butter until melted, then pour over the potatoes and garlic. Add salt and pepper to taste, and mash until creamy with some lumps.
  6. Garnish with fresh herbs and additional butter before serving.
