Delicious roasted corn ribs seasoned and roasted to perfection, perfect for summer gatherings and potlucks.
Ingredients
- 4 corn cobs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat your oven to 400°F.
- Snap each corn cob in half gently, then slice down the middle lengthwise.
- Cut the corn again into quarters to create rib-like shapes.
- Place the corn into a ziplock bag or a large bowl.
- Pour in the olive oil and sprinkle over the spices.
- Seal the bag and shake it, or use a spoon to mix in the bowl.
- Spread the corn in a single layer on a baking sheet.
- Roast the corn for 25-35 minutes, checking occasionally for desired browning.
- Remove from the oven and let cool slightly before serving.
Notes
For extra flavor, consider finishing the ribs over direct heat on a grill.
