Ingredients
- 1 medium cauliflower
- 2 tbsp (30 ml) vegetable oil, for drizzling
- Sea salt and freshly ground black pepper, for sprinkling
- Zest of 1 lemon
- 1/4 cup (15 g) chopped fresh parsley

Instructions
- Set your oven to 425°F and prepare a large baking tray by covering it with parchment paper.
- Divide the cauliflower into small, bite-sized pieces. Mix these with vegetable oil, a pinch of sea salt, and a few twists of freshly ground black pepper, then spread them out on the baking tray. Roast for 25 to 35 minutes, or until they are soft and have a golden-brown tint at the edges.
