Ingredients
- 1 cup cottage cheese
- 2 cups mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic and sauté until the onion becomes translucent.
- Add the sliced mushrooms and cook until they soften.
- Pour in the vegetable broth and bring it to a boil.
- Reduce the heat and let it simmer for about 10 minutes.
- Stir in the cottage cheese and heavy cream, blending until smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
