Description

A simple and flavorful coconut rice made using a rice cooker, combining fluffy jasmine rice with rich coconut milk for an indulgent side dish.


Ingredients

  • 2 cups white jasmine rice
  • 1 (14 oz) can coconut milk (full fat)
  • 1 and 1/4 cups water
  • 1 tsp fine sea salt


Instructions

  1. Rinse the rice 2-3 times until the water is nearly clear. Drain.
  2. Add all of the ingredients to a rice cooker and stir to combine.
  3. Turn the rice cooker to on and allow it to cook for the full cycle.
  4. When done, fluff and serve.

Notes

Experiment with spices like cardamom or a pinch of cinnamon for added flavor. Consider adding vegetables for a more balanced meal.
