An exotic coconut rice dish that transforms plain basmati rice into a creamy delight, perfect for any meal.
Ingredients
- 2 cups uncooked basmati rice
- 1½ cups coconut milk
- 1 cup chicken broth
- ¼ cup cilantro (chopped)
- Juice from 1 lime
- Salt and pepper to taste
Instructions
- Rinse uncooked basmati rice until the water runs clear. Drain any excess water.
- Add rice, coconut milk, and chicken broth to the rice cooker pot.
- Cook on quick setting or white rice setting.
- Open the rice maker and allow it to sit for about 5 to 10 minutes for steam to fully release.
- Stir in lime juice, and season with salt and pepper to taste.
- Garnish with fresh cilantro and serve.
Notes
For a vegetarian option, substitute chicken broth with vegetable broth. You can also add vegetables like peas or bell peppers for more flavor and color.
