Description

Delightful rhubarb custard bars featuring a buttery crust, creamy custard, and tart rhubarb.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 cup cold butter, cubed
  • 3 large eggs
  • 2 cups granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1 cup heavy cream
  • 5 cups rhubarb, diced


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine 2 cups of flour and 1/4 cup of sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Press this mixture into the bottom of a greased 9×13-inch baking dish.
  4. Bake the crust for 10 minutes in the preheated oven.
  5. Meanwhile, in another bowl, whisk together the eggs, 2 cups of sugar, 1/2 cup of flour, salt, and heavy cream until smooth.
  6. Fold in the diced rhubarb gently.
  7. Pour the custard mixture over the partially baked crust.
  8. Bake for an additional 40-45 minutes, or until the custard is set and the top is lightly golden.
  9. Allow the bars to cool completely before cutting into squares and serving.

Notes

For a firmer filling, consider adding an extra egg. Garnishing with powdered sugar or serving with whipped cream enhances presentation.
