Ingredients
- 1/4 cup (60 ml) chopped onion (white, brown or yellow)
- 1 tbsp (15 ml) jalapeño pepper, seeds removed, roughly chopped (fresh best, canned ok)
- 400g / 14 oz canned crushed tomato, best quality
- 4 oz / 120g canned diced green chiles
- 1/4 cup (60 ml) (packed) cilantro/coriander, roughly chopped
- 1/2 tbsp (8 ml) lime juice
- 1 clove garlic, minced
- 1/2 tsp (3 ml) sugar
- 1/2 tsp (3 ml) salt
- 1/4 tsp (1 ml) black pepper
- 1/4 teaspoon (1 ml) ground cumin
Instructions
- Start by placing the onion and jalapeño into a food processor, followed by all other ingredients, beginning with half a tablespoon of lime juice.
- Blend until you reach your preferred texture; I prefer mine fairly smooth to enhance the flavors of the onion and other components.
- Sample with a corn chip to check for seasoning and lime; make adjustments if needed.
- Chill for one hour prior to serving with corn chips or other dipping options.
