Ingredients

  • 1/4 cup (60 ml) chopped onion (white, brown or yellow)
  • 1 tbsp (15 ml) jalapeño pepper, seeds removed, roughly chopped (fresh best, canned ok)
  • 400g / 14 oz canned crushed tomato, best quality
  • 4 oz / 120g canned diced green chiles
  • 1/4 cup (60 ml) (packed) cilantro/coriander, roughly chopped
  • 1/2 tbsp (8 ml) lime juice
  • 1 clove garlic, minced
  • 1/2 tsp (3 ml) sugar
  • 1/2 tsp (3 ml) salt
  • 1/4 tsp (1 ml) black pepper
  • 1/4 teaspoon (1 ml) ground cumin


Instructions

  1. Start by placing the onion and jalapeño into a food processor, followed by all other ingredients, beginning with half a tablespoon of lime juice.
  2. Blend until you reach your preferred texture; I prefer mine fairly smooth to enhance the flavors of the onion and other components.
  3. Sample with a corn chip to check for seasoning and lime; make adjustments if needed.
  4. Chill for one hour prior to serving with corn chips or other dipping options.
