Ingredients

  • 1 pound (454 g) dry kidney beans
  • 25 cup (60 ml) olive oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 2 tablespoon (30 ml) s minced garlic
  • 6 cup (1440 ml) s water
  • 2 bay leaves
  • 1 tablespoon (15 ml) dried parsley
  • 1 teaspoon (5 ml) dried thyme
  • 1 teaspoon (5 ml) Cajun seasoning
  • 5 teaspoon (3 ml) cayenne pepper
  • 25 teaspoon (1 ml) dried sage
  • 1 pound (454 g) beef sausage, sliced
  • 4 cup (960 ml) s water
  • 2 cup (480 ml) s long grain white rice


Instructions

  1. Collect all necessary ingredients.
  2. Wash the beans and let them soak in a large pot filled with water overnight.
  3. In a pan, warm up the olive oil over medium heat. Sauté the chopped onion, green bell pepper, celery, and minced garlic for about 3 to 4 minutes.
  4. Drain and rinse the beans, then place them in a large pot with 6 cups of water. Add the sautéed vegetables to the beans. Add bay leaves, parsley, thyme, Cajun seasoning, cayenne pepper, and sage for flavor. Bring to a boil, then lower the heat to medium-low and let it simmer for 2 and a half hours.
  5. Add the sliced beef sausage to the beans and continue simmering for another 30 minutes.
  6. In the meantime, cook the rice by bringing water and rice to a boil in a saucepan. Lower the heat, cover, and let it simmer for 20 minutes.
  7. Serve the beans on top of the cooked white rice.
