A creamy and flavorful dessert that combines chia seeds, fresh raspberries, and the sweetness of maple syrup, perfect for breakfast or a snack.
Ingredients
- 1/4 cup chia seeds
- 1 cup unsweetened almond milk
- 2 tablespoons pure maple syrup
- 1/2 teaspoon vanilla extract
- 1 cup fresh raspberries (plus extra for topping)
- Sliced almonds or chopped nuts (for topping)
- Shredded coconut (for topping)
Instructions
- Combine chia seeds, almond milk, maple syrup, and vanilla extract in a bowl. Stir until well mixed.
- Mash the raspberries in a separate bowl and fold them into the chia mixture, keeping some chunks intact.
- Cover the bowl and refrigerate for at least 240 minutes or overnight.
- Serve the pudding in bowls and top with additional raspberries, sliced almonds, and shredded coconut. Drizzle with extra maple syrup if desired.
Notes
For a fluffier texture, use a whisk to stir the chia mixture. Experiment with different types of milk for varied flavors.
