Description

A creamy and flavorful dessert that combines chia seeds, fresh raspberries, and the sweetness of maple syrup, perfect for breakfast or a snack.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh raspberries (plus extra for topping)
  • Sliced almonds or chopped nuts (for topping)
  • Shredded coconut (for topping)

Instructions

  1. Combine chia seeds, almond milk, maple syrup, and vanilla extract in a bowl. Stir until well mixed.
  2. Mash the raspberries in a separate bowl and fold them into the chia mixture, keeping some chunks intact.
  3. Cover the bowl and refrigerate for at least 240 minutes or overnight.
  4. Serve the pudding in bowls and top with additional raspberries, sliced almonds, and shredded coconut. Drizzle with extra maple syrup if desired.

Notes

For a fluffier texture, use a whisk to stir the chia mixture. Experiment with different types of milk for varied flavors.
