Description
A comforting and easy-to-make dish combining chicken, vibrant vegetables, and ranch seasoning, perfect for busy weeknight dinners.
Ingredients
- 1.5 lbs boneless skinless chicken, cubed
- 2 cups halved baby potatoes
- 4 cups broccoli florets
- 2 cups baby carrots
- 2.5 tablespoons olive oil (or avocado oil)
- 1/2 cup grated Parmesan cheese
- 1 packet (~4 tablespoons) Hidden Valley® Ranch Dip Mix
- Salt & pepper to taste
Instructions
- Preheat the oven to 400°F.
- Prepare a lined, rimmed baking sheet with foil or parchment paper.
- Combine the chicken, veggies, and olive oil in a large bowl or ziplock bag. Shake to coat evenly.
- Add the Parmesan cheese, ranch dip mix, salt, and pepper. Shake again until everything is well coated.
- Pour the mixture onto the prepared baking sheet.
- Bake for 25-27 minutes, flipping halfway through.
- Serve warm and enjoy!
Notes
For extra flavor, marinate the chicken in the ranch dip mix and olive oil for a couple of hours before cooking. Customize veggies based on what you have on hand.
