Description

Light and refreshing cucumber salad sandwiches perfect for picnics and gatherings.


Ingredients

  • 2 large cucumbers
  • 4 ounces cream cheese
  • 1/4 cup Greek yogurt
  • 1 tablespoon fresh dill (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Whole grain or sandwich bread


Instructions

  1. Slice the cucumbers thinly and set aside.
  2. Mix cream cheese, Greek yogurt, dill, lemon juice, salt, and pepper in a bowl until smooth.
  3. Spread the cream cheese mixture on a slice of bread.
  4. Layer cucumber slices on top and cover with another slice of bread.
  5. Cut them into halves or quarters and serve immediately or refrigerate until serving.

Notes

For maximum crunch, assemble the sandwiches just before serving. Store leftovers in an airtight container.
