Description
Light and refreshing cucumber salad sandwiches perfect for picnics and gatherings.
Ingredients
- 2 large cucumbers
- 4 ounces cream cheese
- 1/4 cup Greek yogurt
- 1 tablespoon fresh dill (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Whole grain or sandwich bread
Instructions
- Slice the cucumbers thinly and set aside.
- Mix cream cheese, Greek yogurt, dill, lemon juice, salt, and pepper in a bowl until smooth.
- Spread the cream cheese mixture on a slice of bread.
- Layer cucumber slices on top and cover with another slice of bread.
- Cut them into halves or quarters and serve immediately or refrigerate until serving.
Notes
For maximum crunch, assemble the sandwiches just before serving. Store leftovers in an airtight container.
